Yes, they did. As mentioned a couple of times previously: if you are an alternate or standby in the city where you live, you can visit family, do classes, do other gigs, hang out with friends etc. when not performing. Thus alternates and standbys usually don't perfom unless they go on for the lead role they are covering.
Being on tour means you have less opportunity to live a normal life when not performing, and most of the people you know will be on stage anyway. So for tours the Christine alternates are usually seen in the ensemble when not playing Christine. (there is obviously also an economical perspective here, making it more lucrative to perform than just hang around, but I guess that goes without saying)
So yes, Caitlin Finnie and Clara Verdier could thus be seen in the Princess costume at curtain call when not going on as Christine. Same was the case with the Restaged UK and US Tour, as well as the previous UK (replica) Tours. Here's Josie Walker, alternate in the UK Tour in 1993:

In the Restaged Tour the alternate position was an unofficial one, as the performer didn't have set dates at all times. They had a more flexible schedule than dictated by Equity, and thus they were all called covers or understudies or just simply listed as "Princess". But you could still expect to see them as Christine 1-3 times a week.
