Whole-grain, protein vegan pancakes
What you need: 3/4 cup soy milk, 1/2 cup whole-grain oats, 1/2 cup pea protein powder, 1/2 banana, 1 tsp chia seeds, 1/2 tsp baking powder, 1/2 tsp cinnamon
Blend everything accordingly (or mix in a bowl squishing the banana first) and bake on low heat and a bit of oil.
Vegan muffins:
Just mix one banana, one chia egg, 1/2 cup of soy milk, 1 cup of oat flour, 1/2 tsp of cinnamon and 1 tsp of baking powder. Add maple syrup for sweetness. Bake in the oven for 15-20 min in 200C.
Vegan, gluten-free bowl for lunch
Millet porridge with some smashed avocado, cherry tomatoes, and a handful of peanuts - it can't get any simpler than that
