Enrique Olvera is so nice on this episode. He’s very clearly an expert, but he isn’t mean at all. It’s very refreshing in a cooking show. Also, I love how he talks about food, and cooking techniques. He really does have a sort of mentor air around him. Very calm, even keeled.
"When you realize the richness of your own culture, you become stronger."

Haven't heard something as inspiring in a while and I wanted somewhere I'd find it later.
