Sorry for being so late to the tasks sksks, I am prone to procractination.
But! Yeah! Fma 03 is so character-focused and they tended to go with less than obvious routes for them. Like you said, Envy is one of the better examples of it, with him acting as a neglected child, trying to embody "Envy" as an example, that others envy him, trying to think of turning that name Dante bestowed on him as a guide, but in actuality all he does is envy others: Ed, humans as a whole, Hohenheim, etc. It's a very fascinating dynamic!
Idt we actually get a full counterpart for him. Ed has Sloth, Roy has Pride, Al has Wrath, Scar has Lust, Dante has Gluttony and Greed, while Envy is a constant presence without actually having a single person that acts as his sin's embodiment. You can count Hohenheim, as he is Envy's creator, and I think Dante named him after her own assumption that Hohenheim did it due to his envy of her success' in Alchemy, but I am not sure it is quite right. I like to think of Envy as a Sin most characters struggle with, due to their desire for a better life, thinking their hand is unfair.
It is symbolically sound, too! Envy kills Ed, and yes, it is the consequence of Hohenheim's actions, but it is also the road Ed paved for himself, digging and digging, searching for the truth. It is Envy's envy for Ed, for the opportunity he got to live a life he never had that kills him; it is Ed not fully processing his envy for those that got a better deal than him, not fully accepting his own life, the lack of equivalent exchange in life, that makes it possible for Envy to kill him, too.

Also, Dante is indeed hot, and I think hot villains are a must in tragedies. It really adds flavor to the whole thing, you know?
