A tasty salad with roasted banana peppers filled with cheese and served on a bed of fresh lettuce leaves. This salad is great as an appetizer or side dish for any event because it has a great mix of tastes and textures.
Ingredients: 6-8 banana peppers. 8 oz cream cheese, softened. 1/2 cup shredded cheddar cheese. 1/4 cup diced red onion. 1/4 cup diced tomatoes. 1/4 cup diced cucumber. 2 tablespoons chopped fresh cilantro. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste. Lettuce leaves for serving.
Instructions: Start by heating the oven to 350F 175C. Peel and cut off the tops of the banana peppers. Then take out the seeds and membranes. Cream cheese, cheddar cheese, red onion, tomatoes, cucumber, cilantro, salt, and pepper should all be mixed together in a bowl. Mix everything together well. Put some cheese inside each banana pepper. Put the banana peppers with the cheese inside on a baking sheet. Bake for 15 to 20 minutes, or until the peppers are soft and the cheese is bubbly. The salad can be made while the peppers are baking. Toss the lettuce leaves with olive oil and balsamic vinegar. Take the banana peppers that have been stuffed out of the oven and let them cool down a bit. Place the stuffed banana peppers on a bed of dressed lettuce leaves.
