Ingredients: 4 pork chops, bone-in or boneless. 2 tablespoons olive oil. 4 cloves garlic, minced. 1 tablespoon fresh thyme leaves. 1 tablespoon fresh rosemary leaves. Salt and pepper to taste.
Instructions: Pat the pork chops dry with paper towels and season generously with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic to the skillet and saut for 1-2 minutes, until fragrant. Place the pork chops in the skillet and sear for 4-5 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 145F 63C for medium-rare or 160F 71C for medium. During the last minute of cooking, add the thyme and rosemary leaves to the skillet, pressing them onto the surface of the pork chops to adhere. Remove the pork chops from the skillet and let them rest for a few minutes before serving. Serve the pork chops hot, garnished with additional fresh herbs if desired.
