Roasted Balsamic Brussel Sprout Pizza with Crispy Prosciutto and a side of Homemade Pickles

Mini Apple Pies with Ginger Butterscotch Caramel
I had a pretty fun few days as the standby chef on chopped this week. Unfortunately no one bailed out so I didn't make it on the show but I did meet a lot of awesome chefs! I also had a hilarious 6:00am run in with judge/chef Alex Guarnaschelli this morning, she seemed a bit out of it... Oh yeah, I also got one of those badass official chopped chef jackets! Well, I finally had some time today to make these little pies...

Sushi Tacos with Sesame Miso Marinated Skirt Steak, Sauteed Green Onions and Spicy Soy Mayo
Just got back from San Francisco with a whole lot more knowledge then I ever had in Asian Cuisine. My buddy Pete Lee has been living out in San Fran for a good 5 years now so there was no issue finding some of the best restaurants that were a bit off the path of the classic tourist destinations. He took us to his buddies Korean Fusion joint called Namu that was actually closing down and moving to the Mission (Brooklyn type area). We let the waitress take control of the ordering, and things got pretty intense... One of the dishes was a Sushi taco similar to this recreation I just whipped up. Thank you Pete Lee and San Francisco for one hell of a food experience!
Mixed Chocolate Covered Strawberries

It's been a day filled with melting, dunking and drizzling gallons of chocolate. Rather then using milk chocolate, try melting down butterscotch chips (like I did here) next time your making something chocolatey .

Banana Blueberry Ginger Muffin Ice Cream Sandwiches with Morning Sauce
I think it's about time this happened... I did some google research and I didnt find anything on the muffin ice cream sandwich. It made perfect sense when I was eating it? Here's one way to avoid Elaine's dreaded muffin stump issue...
"So you just eat the tops?"
"Oh ya, it's crunchy, its explosive! It's where muffin sorta breaks free of the pan and does its own thing. I'll tell ya, thats a million dollar idea right there."

Mexican Crab Cakes with Cilantro Creme topped with Sesame Ahi Tuna Tartare
I've been in the midst of planning the food for the wedding of my new friends Ashley and Ben. Its been damn fun experimenting in the kitchen, pushing my Hors d'œuvre game to crazy levels. I was messing around today and decided to bring two components together in this dish. Mexican ingredients such as roasted red peppers, corn, cilantro, and lime and Asian flavors like sesame, green onion, and soy meet for a fusion orgy of flavor. This baby will probably never make it out of the laboratory, well... maybe one day...
