Max’s Restaurant has always been a favorite dining spot for Filipinos whether here or abroad. I was really hungry when our order of Adobo Ribs came out so it’s finally time for me to try this gorgeous plate of pork ribs. This new dish actually came out back in January, but it’s better late than never.
The new Adobo Ribs is a classic Filipino dish served with a special spin. The Adobo Ribs are made by slow-cooking a half slab or pork ribs until it is moist and fork-tender. It is then sweetened with onions, served with a tangy and flavorful sauce, and topped with leeks that automatically brings back memories of eating the classic adobo.
I took a small slice of the adobo ribs and I couldn’t believe how tender they really are. The strips of pork just open up easily and you don’t really need a knife to do this. The majestic aroma of the adobo and laurel leaves gives way to the classic soy vinegar combination we all know and love. I could taste the garlicky flavors as well, especially with the generous amount of garlic flakes on top.
The adobo sauce is thick and rich, unlike other adobo versions which offer light sauces. This flavor seeps into the tender ribs and you can just imagine how well the sauce goes with steamed rice. In fact, I had to get extra servings of rice because I could not get enough of the adobo ribs. They are that good! The Adobo Ribs can be order a la carte for P449.
But the Adobo Ribs are also best when shared, so you can enjoy it with family and friends alongside a serving of Sizzling Tofu or Pancit Canton, one large plain rice, three glasses of Iced Tea, and three dessert-sized servings of Buko Pandan—all for just P899.
Max’s Restaurant is also serving up another new dish, the Beef Salpicao (P499). This classic Spanish-Filipino dish has beef sirloin stir-fried in a hot pan with lots of minced garlic and a variety of spices. It also comes with lots of garlic, just as we like it. This is also available in a Rice Bowl for only P249.
