Instructions: In a bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the crushed pineapple and vanilla extract to the butter-sugar mixture, and mix well. In a separate bowl, whisk together the all-purpose flour, salt, and baking powder. Gradually add the dry ingredient mixture to the wet mixture, mixing until a dough forms. Add a few drops of pink food coloring to the dough and mix until the desired color is achieved. Wrap the dough in plastic wrap and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Use the flamingo-shaped cookie cutter to cut out cookie shapes and place them on the prepared baking sheet. Gently gather the scraps, re-roll the dough, and continue cutting until all the dough is used. Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cooled, you can decorate them with royal icing, sprinkles, or edible glitter if desired.
