Firstly I'd like to formally welcome you to the rabbit hole. I too have spent hours drooling at pens on the Goulet website -- those guys really know how to take nice product pictures, and that's their gain, my (our) wallet's loss!
But secondly, I have a very important question -- is this your very first fountain pen? I'm assuming it is, and while I cannot question your aesthetics (they are on point), I would like to make a few points/suggestions, especially since you asked for my opinion on your choice!

I feel like this is SUCH a difficult question, because it really differs person to person. We all put off writing for different reasons, and the best thing you can do is figure out why.
Crunched for time? Either plan to do short bursts throughout the day, or set aside dedicated writing time
Too tired? Try to set your writing time earlier in the day-- maybe even go to bed and wake up earlier, so you spend your post breakfast time doing it
Daunted? Write stupid edit smart. Focus less on quality and more about quantity, and then dedicate a day or two a week (or a month, whatever) to either rewriting what you have or editing it
Unmotivated? Set goals for yourself. Start small: 5 minutes, 100 words, whatever, and then move yourself steadily up as you continue to meet that goal. If you miss it, either drop down a step, or keep trying
There’s lots of reasons to Not Write, and lots of people will tell you do just brute force it and get your butt in the chair, which honestly-- that’s true. But sometimes you need to figure out HOW to get there, and part of that is realizing why you aren’t
