You're one of the only authors I've seen do this
But I really enjoy when Zuko is the one, in a AU, with the light/summer/spring motif, like a fae, because yeah that makes sense! It's especially great because he awkward and grumpy and the contrast really gets me

Yes Zuko does have a lot of Sun motifs even in the show. It's one of the things I love about Zutara. The whole Sun and Moon symbolism. And having such a summertime theme character being grumpy while his partner is winter theme but positive.
Also, there's a Hades and Persephone fanfic with Katara as Hades and Zuko as Persephone. I think it's called Don't follow me down. (Still haven't read it yet.) But there's some more Sun Theme Zuko if you want to read more.

Was very strict when it came to manners. And little springtime insects followed him everywhere like he was some sort of Disney princess.
The South Pole didn't even have bees!

The Fae Prince placated the eager suitors best he could. He expected a crowd the moment he returned to his homeland, but this was more than anticipated. It seems he arrived before news of his soul bound did.
Just as he used his last excuse, the air cooled and sky darkened. A single storm cloud approached the group of fae. Right under the cloud, was a single figure unbothered by the freezing rain.
"What's a Dark Waters vampire doing here?"
The Fae Prince missed who asked the question. Frankly, he didn't care who. An excited smile grew on his face as not so subtly nudged the suitors aside to make way for the important guest.
"Wife."
Alarmed gasps sounded.
"You're married t-to..."
The Vampire Princess flashed a toothy grin.
"Hello Husband."
