A delicious and easy-to-make casserole that combines the flavors of fajitas with the convenience of a casserole dish. Perfect for a quick weeknight dinner!
Ingredients: 2 cups cooked shredded chicken. 1 bell pepper, sliced. 1 onion, sliced. 1 cup cooked rice. 1 cup shredded cheese. 1 can diced tomatoes with green chilies, drained. 1 packet fajita seasoning mix. 1/4 cup chicken broth. 1 tablespoon olive oil.
Instructions: Preheat the oven to 375F 190C. In a skillet, heat olive oil over medium heat. Add bell pepper and onion, cook until softened. In a large bowl, mix together cooked chicken, cooked rice, cooked bell pepper and onion mixture, diced tomatoes, fajita seasoning mix, and chicken broth. Transfer the mixture into a casserole dish and spread evenly. Top with shredded cheese. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy!
