This Autumn Harvest Sandwich is a tasty and filling meal that brings together the tastes of fall. Every bite of this dish tastes like fall with its roasted butternut squash, sweet apples, tangy goat cheese, and caramelized onions. The balsamic glaze makes this sandwich taste more gourmet by adding a bit of sweetness and depth.

Ingredients: 1 loaf crusty bread. 1 cup roasted butternut squash slices. 1 cup sliced apples. 1 cup arugula. 1/2 cup caramelized onions. 1/2 cup goat cheese. 1/4 cup balsamic glaze. Salt and pepper to taste.

Instructions: You can toast the bread a little and cut it up. On one side of each piece of bread, spread goat cheese. Half of the bread slices should have roasted butternut squash slices, sliced apples, arugula, and caramelized onions on them. Add the balsamic glaze on top of the filling. Add pepper and salt. Add the last few slices of bread on top to make a sandwich. Serve the sandwiches by cutting them in half.

Late last year, we had the pleasure of celebrating the launch of the Olio e Piú cookbook; this time, we celebrated their new Fall menu. Just as before, there were so many delicious dining options to enjoy. The new dinner menu items include Garganelli with braised rabbit; Mozzarella Di Bufala with imported buffalo mozzarella, grilled portobello mushrooms, and marinated roasted peppers; Vitello alla Milanese with fried veal cutlet, arugula, tomato, parmesan, lemon; and Trofie al Pesto with broccoli rabe pesto, lemon zest, and Pecorino Toscano; plus so much more.

Have you tried our honeynut squash dish? @gooddogfarm has been growing some real cuties. This one had an extra small seed cavity, so lots of delicious sweet squash meat. We roast them, season them with olive oil and sea salt, then top them with toasted quinoa, red onion, maple and sorghum molasses vinegar marinated apples, parm (or not if you eat vegan) and @motzi.bread sourdough crumbs (or not if you eat GF).
