These tasty and nutritious Paleo pumpkin bars are ideal for fall. They are free of grains and refined sugar, and they're flavorful, moist, and full of pumpkin spice goodness.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 cup coconut sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1 tsp ground cinnamon. 1/2 tsp ground ginger. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp salt. 1 cup pumpkin puree. 1/4 cup coconut oil, melted. 3 eggs. 1 tsp vanilla extract.
Instructions: Preheat oven to 350F 175C. Grease an 8x8 inch baking pan. In a large bowl, whisk together almond flour, coconut flour, coconut sugar, baking powder, baking soda, spices, and salt. In another bowl, mix pumpkin puree, melted coconut oil, eggs, and vanilla extract. Gradually add wet ingredients to dry ingredients, stirring until well combined. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the bars to cool completely before cutting into squares. Serve and enjoy!
