Ingredients: 1 1/2 cups shredded zucchini. 1/2 cup unsweetened applesauce. 1/2 cup maple syrup. 1/4 cup almond milk. 1 teaspoon vanilla extract. 2 cups whole wheat flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/2 cup chopped walnuts or pecans optional.
Instructions: Set the oven to 350F 175C and heat it up. You can either grease or line a 9x5-inch loaf pan. Put the apple sauce, maple syrup, almond milk, shredded zucchini, and vanilla extract in a large bowl. Mix well. Mix the whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg together in a different bowl using a whisk. Mix the dry and wet ingredients together until they are just mixed. If you want to, fold in the chopped nuts. As soon as the loaf pan is ready, pour the batter into it and use a spatula to smooth the top. Put it in the oven and bake for 50 to 60 minutes, or until a toothpick stuck in the middle comes out clean. Take it out of the oven and let it cool for 10 minutes in the pan. After that, move it to a wire rack to cool completely before cutting it.
