This kid-friendly Paleo sweet potato salad is bursting with flavor and nutrition. It's a colorful and delicious side dish that will appeal to both kids and adults alike.
Ingredients: 2 medium sweet potatoes, peeled and diced. 2 tablespoons olive oil. Salt and pepper to taste. 1/4 cup diced red onion. 1/4 cup diced bell pepper. 1/4 cup diced cucumber. 1/4 cup cherry tomatoes, halved. 2 tablespoons chopped fresh parsley. 2 tablespoons apple cider vinegar. 1 tablespoon honey optional. 1 teaspoon Dijon mustard.
Instructions: Preheat oven to 400F 200C. Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for 20-25 minutes or until tender and lightly browned, stirring halfway through. In a large bowl, combine roasted sweet potatoes, red onion, bell pepper, cucumber, cherry tomatoes, and parsley. In a small bowl, whisk together apple cider vinegar, honey if using, and Dijon mustard. Pour the dressing over the salad and toss to coat evenly. Serve immediately or refrigerate until ready to serve.
