Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 1/2 cup all-purpose flour. 2 tablespoons olive oil. 4 tablespoons unsalted butter. 1/2 cup chicken broth. 1/4 cup fresh lemon juice. 1/4 cup capers, drained. 2 tablespoons chopped fresh parsley.
Instructions: Add salt and pepper to the chicken breasts. Coat the chicken in flour and shake off the extra. Warm up the olive oil in a big pan over medium-high heat. It will take about 4 to 5 minutes per side for the chicken to become golden brown on both sides and fully cooked. Take the chicken out of the pan and set it aside. Over medium heat, melt the butter in the same pan. Add the chicken broth, lemon juice, and capers, and mix them in. Scrape the bottom of the pan to get rid of any brown bits. Simmer for about 5 minutes, or until the sauce gets a little thicker. Put the chicken back in the pan and cook for another two to three minutes, until it's fully heated through. Add chopped parsley as a garnish before serving.
