A few of my favourite easy dinner recipes:
You need a blender or kitchen machine and throw in vegetables, tomato(fresh, past or canned), garlic, salt and pepper and mix this up with some oil of choice and lukewarm water. Fry this mix in a pan and add any protein or none (I like it with eggs) and just any leftover carbs (rice, bread, potatoes, pasta, even noodles). This could be yours when you switch up your spices, but flavour depends on your mood, just throw something in.
Shoarma, could be vegetarian or meat if choice. The spices for your meat and veggies: paprika, nutmeg, fennelseeds/musterdpowder/karwijseed, pepper, cloves, kurkuma, ginger, chillipowder, dried chillies, garlicpowder and onionpowder. Season your meat or vegetarian replacement, fry this. Chop up 2 onions, garlic and any kind of cabbage. Add your veggies and fry untill they are just cooked but have a bite. Eat this with letuce cups/pita bread/flatbread/rice and garlic sauce and for the spice lovers sambal.
Easy macaroni dishes: fry up diced onions with tiny meatballs (again, can be vegitarian) and currypowder. Add your cooked pasta and mix. OR fry up your onion with diced bacon and add in ketchup or a tomate base, salt and pepper, paprikapowder, italian herbs at the same time as your cooked pasta. Serve with cheese if you want.
Dutch stampot: cook with salt a veggie; brocolli or cauliflower or carrots with onions or beets or spinach or brussel sprouts or endive. Cook potatoes with salt. Make a jus/gravy or if you are lazy add a chunk of butter when mashing later on. Add a protein, our go to is meatballs or smoked sausage or fish fingers. If your veggie of choice is cooked and your potatoes, than mash it together in a pot and serve together with the gravy/jus and protein. A Dutch household eats this once a week at the bare minimum. Add some mustard if you want taste.
