Mediterranean Hummus Crostini This delightful appetizer combines the creaminess of hummus with the tanginess of feta cheese and the freshness of cucumbers and tomatoes, creating a perfect bite for any gathering. Ingredients 1 or 2 Italian Bread or French Baguette 10-12 oz Hummus (plain or your favorite flavor) 6 oz Crumbled Feta Cheese 4 Persian Cucumbers, chopped 10 oz Grape Tomatoes Olive Oil Sea Salt Instructions 1. Preheat your oven to 400F. Add tomatoes to a baking dish, drizzle with olive oil, and sprinkle with 1/4 tsp of sea salt. You can either slice the tomatoes in half or leave them whole. 2. Slice the bread into 1/2" thick pieces and arrange them on a baking sheet. Drizzle the slices with olive oil. 3. Place both the bread and the tomatoes in the oven simultaneously. The tomatoes will bake for 25 minutes, while the bread will need about 10 minutes. You can either add them to the oven together and remove the bread after 10 minutes or put the tomatoes in first and add the bread when there are about 10 minutes left. Check the bread and take it out when the edges turn golden brown. 4. Chop the cucumbers into small chunks for easy scooping. You can mix these with the feta cheese or serve them in separate bowls. 5. Arrange the baked bread on a large platter, surrounding it with the chopped cucumbers, feta, and roasted tomatoes. Provide olive oil on the side for an extra drizzle if desired.
