The outside of these roasted fingerling potatoes is crispy, and the inside is soft. They make a great side dish. The garlic and thyme give the potatoes great flavors, which makes them a great addition to any meal.
Ingredients: 1 lb fingerling potatoes, washed and halved lengthwise. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Preheat oven to 400F 200C. In a large bowl, toss fingerling potatoes with olive oil, minced garlic, dried thyme, salt, and pepper until evenly coated. Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes or until potatoes are golden brown and fork-tender, stirring halfway through. Garnish with fresh parsley if desired before serving.
