This steamed fish cooked in the Jamaican style on a BBQ grill is full of flavor from the fragrant vegetables and tangy lime. Steaming fish in foil helps keep the moisture in and lets all the great flavors soak into the fish.
Ingredients: 1 whole red snapper cleaned and scaled. 1 lime sliced. 2 tomatoes sliced. 1 onion sliced. 2 cloves garlic minced. 1 scotch bonnet pepper sliced. 2 sprigs thyme. 2 tbsp soy sauce. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: Warm up the grill over medium heat. Add salt, pepper, and lime juice to the fish all over. Cut up half of the tomatoes, onions, garlic, scotch bonnet pepper, and thyme and put them inside the fish. Add the rest of the vegetables to the fish. Put olive oil and soy sauce on top of the fish. Make sure the fish is well protected in aluminum foil. Wrap the fish in foil and put it on a hot grill. Cook for 20 to 25 minutes, or until the fish is fully cooked and flaky when you use a fork. Carefully take the fish out of the foil and place it on a serving platter. Serve hot.
