Ingredients: 1 lb beef stew meat. 1 cup barley. 8 cups beef broth. 1 onion, diced. 3 carrots, diced. 3 celery stalks, diced. 8 oz mushrooms, sliced. 2 cloves garlic, minced. 1 tsp thyme. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add beef stew meat and cook until browned on all sides. Add diced onion, carrots, celery, and minced garlic. Cook until vegetables are tender. Pour in beef broth and bring to a boil. Stir in barley, mushrooms, thyme, salt, and pepper. Reduce heat to low and simmer for 45-50 minutes, or until barley is tender and flavors are well combined. Adjust seasoning if necessary. Serve hot and enjoy!
