Ingredients: 1 can 15 ounces pumpkin puree. 1 can 14 ounces coconut milk. 2 cups vegetable broth. 2 tablespoons red curry paste. 1 tablespoon maple syrup.
Instructions: Pumpkin puree, coconut milk, vegetable broth, red curry paste, and maple syrup should all be put into a slow cooker. Mix everything together well. Turn the heat down to low, cover, and cook for 4 to 6 hours, or until the soup is hot all the way through. If you want, you can serve it hot with cilantro or a dollop of coconut cream on top.
