Rustic Beetroot, Chocolate and Rose Brownies (Gluten & dairy free) 🌹
Ingredients that work! Beetroot makes brownies extra moist, naturally sweet and richer in colour without altering the chocolate flavour! Coconut oil keeps brownies moist and dairy‑free and the almond flour makes them tender, nutty and gluten‑free. Rose water is a fragrant liquid made by steeping or distilling rose petals, used to add a delicate floral flavour to food and drinks. Dark chocolate has more cocoa solids and less sugar than milk chocolate, giving brownies a deeper flavour and making them less sweet.

“FUN”Fetti Cupcake Recipe
Let’s put the “Fun” in Funfetti! Today I will be showing you how I made these cute little guys! Lets start the FUN! I’m surprised these turned out so good because I am NOT the most experience baker out their XD I am a pretty good Photographer though! ;)
INGREDIENTS:
3 cups flour
1 3/4 cups sugar
1 1/2 teaspoons baking powder
3/4 teaspoons salt
4 large eggs
3/4 cups melted butter
1 cup milk
1 tablespoon vanilla extract
1/2 cup rainbow sprinkles (or more if you’re a sprinkle freak)
2 cups frosting (Optional)
INSTRUCTIONS:
1.) Arrange a rack in the middle of your oven and heat to 350°F. Line 2 standard (12-well) muffin pans with paper liners; set aside.
2.) Whisk the flour, sugar, baking powder, and salt together in a large bowl.
3.) Add the eggs, oil or butter, milk, and vanilla and mix with an electric hand mixer on medium speed until smooth, about 3 minutes. Fold in the sprinkles. Do not over mix or the sprinkles will streak the batter.
4.) Fill each paper liner 3/4 full. We don’t want a huge mess here haha. Bake until lightly browned, about 13 to 15 minutes.
5.) Cool the cupcakes in the pan for about 5 minutes, then transfer to a cooling rack to cool completely before frosting. You can chose whichever frosting you would like or even make your from scratch! I like vanilla! :)
NOW ENJOY!
Try not to eat too many all at once unless you want a major tummy ache. I added Birthday candles on top just to make myself feel special. It was also a nice touch for these photos I took :) It wasn’t really anyone's Birthday BUT if it was, these little mini funfetti cup-cakes would be a super fun treat to dig into to!
