These simple falafel made with spinach are not only vegan and low in carbs, but they are also very tasty and good for you. They are easy to make in a food processor and can be used to make a tasty and healthy meal in 10 minutes.
Ingredients: 1 can chickpeas, drained and rinsed. 2 cups fresh spinach leaves. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon lemon juice. 1 teaspoon ground cumin. 1 teaspoon ground coriander. Salt and pepper to taste.
Instructions: Put chickpeas, spinach, garlic, olive oil, lemon juice, cumin, coriander, salt, and pepper in a food processor and blend them all together. Process the mixture until it is well mixed and turns into a thick paste. Make little balls out of the mixture and press them down a bit to make falafel patties. Put some olive oil in a nonstick skillet and heat it over medium-low heat. The falafel patties should be cooked for three to four minutes on each side, or until they are golden brown and crispy. Warm it up and serve it with your favorite sauce or in a pita with salad.
