If you don't have fresh ones you can omit or add 1 tsp sage. Add 1 tbsp cornstarch while cooking it down in a saucepan, then add lightly reduced mixture to the rolled out dough (roll the edges over themselves to prevent liquid leaving. Add extra lemon zest on top. Best served with ice cream or a dollop of mascarpone-lemon-coulis.
