FRESNO, Calif.  -- The Mexican Consulate of Fresno is using poetry to celebrate the country's rich history. The group is hosting an indigenous poem contest that runs now through March 16.

Organizers say Fresno County has one of the largest Mexican communities in the country and this competition is letting locals express their culture through art. Poems submitted must be written in one of three indigenous languages -- those are Mixteco, Zapoteco and Purepecha. This is the first year the consulate of Mexico is putting on the poem contest. They say it's been a long time coming -- considering the country's rich linguistic history. The competition is open to everyone. You can submit your poem by sending it to [email protected].

Summer is officially in full swing. So, for those residing in the Hamptons this summer, prepare yourselves for a season full of fun, elegance and of course, exquisite food. Here are five restaurants all around the Hamptons that must not be overlooked.

Fresno, East Hampton

Upon entering my absolute favorite Hamptons spot, open arms are what you’ll receive. Manager Tina Pignatelli synthesizes unrelenting customer service and a warmhearted atmosphere. Cozy up to the bar, relax on the chic outdoor patio or see-and-be-scene in the lavish dining room. A relaxed, neighborhood vibe serving modern American cuisine, prepare to be dazzled by the lovely and talented executive chef, Gretchen Menser.

Favorite Dish: Cazuela Roasted Local Tilefish – basically the best mix of Thai herbs, spices and noodles. YUM!

Highway Restaurant, East Hampton

A contemporary East Hampton choice serving New American cuisine with nods to urban and global influences. General manager, Adam Lancashire, knows just how much swank was needed to make this new favorite a huge success. Grab a super special cocktail at the bar or be wowed in the dining room. This is the kind of place you will call home.

Favorite Dish: Roast Chicken – or anything with a Thai spin. If you can’t tell, I love Thai.

The Surf Lodge, Montauk Fish, fish, fish! A seasonal sensation, this season’s menu is spot on. Octopus, branzino, tuna; need I say more? Aside from the delicious, historic Montauk food, enjoy concerts, fitness classes and artist residencies. Everyone should experience a little crazy Montauk summer vibe.

Favorite Dish: Shaved Montauk fluke – Simple, yet spectacular.

Sunset Beach, Shelter Island Hello St. Barths! Nothing compares to a weekend afternoon at Sunset Beach. I’d prefer arriving to this restaurant and bar by boat because the harbor is just as fun. The menu celebrates delicious summertime food of the French Riviera and coastal Italy. Beachside chic, overflowing rosé and French bistro at its finest.

Favorite dish: Moules Marinieres – who doesn’t love mussels and frites?!

Tutto il Giorno, Southampton What once began as an Italian family’s dream, Tutto is a power scene space serving sublime Italian food. My favorite part about this spot is the heavenly garden, so if you get the chance, opt for a divine table in an awesome Italian atmosphere. 

Favorite dish: Cartoccio – fish baked in parchment paper, roasted tomato vinaigrette.
