The flavors and textures in this Courgette, Mint, and Feta Frittata go so well together. This frittata is very simple to make and tastes great with the fresh mint, the creamy feta cheese, and the slightly sweet courgettes.
Ingredients: 4 large eggs. 1 medium courgette, thinly sliced. 1/4 cup fresh mint leaves, chopped. 1/2 cup crumbled feta cheese. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Preheat your oven's broiler. In a medium-sized bowl, beat the eggs and season with salt and pepper. Heat the olive oil in a non-stick ovenproof skillet over medium heat. Add the sliced courgette to the skillet and saut for 2-3 minutes until it starts to soften. Pour the beaten eggs over the courgette slices and scatter chopped mint leaves and crumbled feta cheese evenly. Cook for 3-4 minutes without stirring, allowing the edges to set. Transfer the skillet to the preheated broiler and broil for 2-3 minutes until the top is golden and the center is set. Carefully remove the frittata from the skillet and slice into wedges. Serve hot and enjoy!
