Carrot Cake Pancakes are a delightful breakfast treat that captures the flavors of carrot cake in pancake form. They're perfect for a special breakfast or brunch.
Ingredients: 1 cup grated carrots. 1 cup all-purpose flour. 2 tbsp brown sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp salt. 1 egg. 1 cup buttermilk. 1/2 tsp vanilla extract. 1/4 cup chopped pecans optional. Cream cheese frosting optional.
Instructions: Grate the carrots and mix them with the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl. Add the egg, buttermilk, and vanilla extract to a different bowl and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; a few lumps are fine. Set a griddle or nonstick skillet over medium-high heat and use cooking spray or butter to lightly coat it. Put 1/4 cup of batter at a time onto the hot griddle and spread it out into circles. Once the pancakes start to bubble on top, flip them over and cook the other side until it's golden brown. If you want, you can add chopped pecans to the pancakes while the second side is cooking. Take the pancakes off the griddle and, if you want, serve them hot with cream cheese frosting.
