Ingredients: 1 lb ground chicken. 1 packet taco seasoning mix. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 cup cherry tomatoes, halved. 1 cup red onion, finely chopped. 1 cup bell peppers red, green, or yellow, diced. 1 cup shredded lettuce. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/2 cup salsa. 1/4 cup fresh cilantro, chopped. 2 tbsp olive oil. Salt and pepper to taste. 4 large mason jars with lids.
Instructions: Put the olive oil in a pan and heat it over medium-high heat. Stir the ground chicken in with a spoon as it cooks until it turns brown and is fully cooked. Add the taco seasoning mix and stir it in. Cook for another two to three minutes. Take it off the heat and let it cool down a bit. Put two to three tablespoons of salsa in the bottom of each salad jar before putting them together. The following should be put in each jar in this order: corn, cherry tomatoes, red onion, bell peppers, ground chicken mixture, lettuce, cheddar cheese, sour cream, and fresh cilantro. Put the jars in the fridge until you're ready to serve and screw the lids on top. If you want to spread the dressing out before you eat, you can shake the jar or pour it into a bowl and toss the salad in it.
