Crunchy Taco Salad Delight This vibrant and satisfying salad combines the flavors of a taco with the crunch of Doritos, making it a perfect meal for any occasion. Ingredients 1 pound lean ground beef or ground turkey 2 TBSP taco seasoning ¼ cup salsa 4 cups chopped romaine lettuce 1 cup corn (canned or steamed from fresh/frozen) 1 cup diced onion (any color) 1 cup diced tomatoes ¼ cup sliced green onion 2 cups doritos 1 small avocado (diced before serving) grated cheddar cheese (optional) to taste ¼-½ cup sour cream for topping black beans or pinto beans salsa or taco sauce guacamole jalapeños bell pepper black olives cilantro Instructions In a skillet, brown the ground beef over medium-high heat until cooked through. Drain if needed. Add the taco seasoning, salsa, and ¼ cup water. Simmer uncovered over low heat until saucy and thickened. Chop all the veggies up super small for a little bit of goodness in every bite. Finely chop romaine lettuce, onion, and tomatoes, and thinly chop/slice green onion. Add to a large mixing bowl. Next, add corn, crushed or whole Doritos, and any extras desired from the list above. Let your taste buds be your guide! Mix well and divide salad into bowls. Top with desired amount of grated cheese, diced avocado, and a dollop or two of sour cream. For a saucier taco salad, you can add some of your favorite salsa or taco sauce to the mix. Enjoy!

A MEXICAN CHRISTMAS STORY

Twas la noche before Christmas and all through la casa Not a creature was stirring, Caramba! ?Que pasa? Los ninos were all tucked away in their camas, Some in vestidos, and some in pijamas. While Mama worked late in her little cocina, El Viejo was down at the corner cantina. The stockings were hanging con mucho evidado, In hopes that St. Nicholas would feel obligado, To bring all the children, both buenos y malos, A nice batch of dulces y otros regalos. Outside in the yard there arose such a grito That I jumped to my feet like a frightened cabrito. I ran to my window and looked afuera, And who in the world do you think era? St. Nick in a sleigh and big red sombrero Came dashing along como loco bombero! And pulling his sleigh, instead of venados Were eight little burros, approaching volando. I watched as they came, and this muy gordo hombre Was shouting and whistling and calling los nombres: "!Ay, Pancho!, ! Ay, Pepe!, !Ay, Cuca!, !Ay, Beto!! Ay, Chato!, !Ay, Chopo! !Ay, Maruca y Nieto!" Then standing up tall with his hand on his pecho, He flew to the top of our very own techo. With his round little belly like a bowl of Jalea, He struggled to squeeze down our old chimenea! Then, huffing and puffing, at last in our sala, With soot smeared all over his red suit de gala, He filled all the stockings with lovely regalos. He turned like a flash and was gone like viento, And I heard him exclaim--and this is verdad-- "Merry Christmas to all! !Feliz Navidad!"

We made adult size Taco-in-a-bag! Took a regular bag of doritos (not party size) and cut the bag in half. Add as many chips as you want then top with your favorite taco fixings! Easy cleanup and a favorite that the tiny individual serving bags just don't do justice
