My #mum paved her way to #heaven on jars of #marmalade. She used to make countless jars to raise for #turakina school. All the kids brought a jar full of sugar, lemons, butter, and a couple of #eggs to school. This is nothing in a #farming community that brought their #calves and #lambs in the car for the annual judging day. Most people were generous and there’d be boxes of jars, bags of sugar, eggs, lemons, and flour. Mum and her friend would take the ingredients and in the space of a day, turn out dozens of sponge cakes, and countless jars of marmalade, and lemon curd - all cooked on an old enameled wood and coal range. The cooker was so old it had holes in it that Mum and Dad had pushed cooking foil into the gaps to hold the heat in. We never had the money for a new oven. We’d load the bounty into cars and head into the market in #whanganui. Mums efforts raised hundreds of pounds for the school. I made lime marmalade using Mum’s recipe. It turned out perfectly. It was barely set when we toasted bread over the open fire and sampled the first jar. Delicious!
