Spring Onions & Potato Fry

Hello Foodies,

I hope you are trying and enjoying the earlier recipes. As promised, here is the latest recipe.

The recipe is "Spring Onion and Potato Fry". It can be served with Roti/Parathas.

Preparation Time: 5 minutes.

Cooking Time: 15 minutes.

Yields: 2 servings

Ingredients:

Spring Onions (Green) ~ 3 - 4 strands

Spring Onion (White) ~ 3

Potato ~ 1

Green Chilies ~ 2

Panch Phoron ~ 1/2 tsp

Dry green chilli ~ 1

Turmeric Powder ~ 1 tsp

Coriander Powder ~ 1/2 tsp

Salt to taste

How to prepare:

Chop the spring onions (green & white) and potato and slit green chillies.

Heat oil in a pan, add dry green chilli and panch phoron.

Add the spring onions (white) and saute for 1 minute.

Add potato and green chilli and saute for another 1 - 2 minutes.

Finally add the spring onions (green) and this spring onion will leave some water on heating.

Add turmeric powder and coriander powder. Now cover it with a lid and keep in medium flame.

Open the lid after 3 - 4 mins and keep stirring until the water soak fully.

Add salt to taste. Turn off the gas.

Serve hot with roti / paratha.
