These Mushroom Crepe Croquettes are a tasty snack or starter. The crepes are filled with a tasty mushroom and cheese mixture and then fried until the outside is golden brown and the inside is soft and full of flavor.
Ingredients: 1 cup all-purpose flour. 2 eggs. 1 1/2 cups milk. 1/4 teaspoon salt. 1/4 teaspoon pepper. 2 tablespoons butter. 1 cup mushrooms, finely chopped. 1/2 cup onion, finely chopped. 1/2 cup grated cheese your choice. 1/4 cup fresh parsley, chopped. Oil for frying.
Instructions: Get flour, eggs, milk, salt, and pepper in a bowl. Mix them with a whisk until you get a smooth batter. Take some time to rest. Set the pan on medium heat and melt the butter. Cut up the onions and mushrooms and add them. Saut the mushrooms until they are soft and all of their liquid is gone. Take it off the heat and let it cool down. The mushrooms and onions that have been sauted, the grated cheese, and the chopped parsley should all be mixed into the crepe batter. Put some oil in a nonstick skillet and heat it over medium-low heat. Put a little batter into the pan and swirl it around to make it spread out evenly. It's done when the bottom is golden brown and the edges start to come off. Turn it over and cook the other side until it's golden brown too. Do it again with the rest of the batter. Let the crepes cool down a bit after they're done. Get rid of the corners and squares on each crepe. In a deep pan or fryer, heat the oil to 350F 175C. Be careful as you fry the rectangles and squares of crepe until they are golden and crispy. Put paper towels down to dry. Serve the Mushroom Crepe Croquettes hot with the sauce of your choice.
