Banana muffins that are quick and easy to make with only one bowl! These muffins are very light and fluffy, making them great for breakfast or as a snack. You can also add your favorite things to them, like chocolate chips or walnuts.
Ingredients: 3 ripe bananas, mashed. 1/3 cup melted coconut oil or vegetable oil. 1/2 cup maple syrup or any other liquid sweetener. 1/4 cup plant-based milk. 1 teaspoon vanilla extract. 1 teaspoon baking soda. Pinch of salt. 1 1/2 cups all-purpose flour. 1/2 cup chopped walnuts or chocolate chips optional.
Instructions: Set the oven to 350F 175C and heat it up. Set aside a muffin tin and grease it or line it with paper liners. Mash the bananas in a big bowl until they are smooth. Melt the coconut oil and mix it with the maple syrup, plant-based milk, and vanilla extract. Mix well. Add the baking soda and salt to the banana mix. Use a stir to mix. Slowly add the flour to the mixture and stir it in until it's just combined. Be careful not to mix too much. If you want to, you can fold in chocolate chips or chopped walnuts. Fill up about three quarters of the way to the top of each muffin cup with batter. After the oven is hot, bake it for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean. Let the muffins cool for 5 minutes in the pan, then move them to a wire rack to cool all the way down. Have fun with these vegan banana muffins that are light and fluffy.
