These Santa Fe frittatas are packed with flavor and perfect for a low carb and gluten-free breakfast or brunch. Ingredients: 6 large eggs. 1/4 cup heavy cream. Salt and pepper, to taste. 1 tablespoon olive oil. 1/4 cup diced onion. 1/4 cup diced bell pepper. 1/4 cup diced tomatoes. 1/4 cup diced green chilies. 1/4 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro. Optional toppings: avocado slices, sour cream, salsa.
Instructions: Start by heating the oven to 350F 175C. Add eggs, heavy cream, salt, and pepper to a bowl and whisk them together until they are well mixed. A skillet that can go in the oven should have olive oil in it. To make the vegetables soft, add diced onion and bell pepper to the pan. Add the green chilies and diced tomatoes and stir them in. Cook for one more minute. Add the egg mix to the pan and cover the cooked vegetables with it. Cover the whole thing with shredded cheddar cheese. Place the skillet in an oven that has already been heated and bake the frittata for 15 to 20 minutes, or until it is set and golden brown. Take it out of the oven and let it cool down a bit before cutting it. Add chopped fresh cilantro and any other toppings you'd like. Enjoy this tasty low-carb and gluten-free meal while the Santa Fe frittatas are still warm!

Whisk them together until they are well mixed. In a nonstick skillet that can go in the oven, heat the olive oil over medium-low heat. The zucchini, red bell pepper, asparagus, and cherry tomatoes should all be added now. Saut the vegetables for four to five minutes, or until they start to get a little soft. Put the chopped spinach in the pan and cook for two more minutes, until it wilts. Add the egg mix to the vegetables that have been cooking in a skillet. To spread the vegetables out evenly, stir them gently. If you want to use it, sprinkle grated dairy-free cheese on top of the frittata. Put the skillet in an oven that has already been heated up and bake the frittata for 20 to 25 minutes, or until the top is set and a little golden. Take it out of the oven and let it cool down for a few minutes before cutting it. As a healthy and easy-to-carry breakfast, serve your gluten-free Spring Vegetable Frittatas!

A couple weeks ago, my partner decided that she wanted to make a frittata at some point. Yesterday, I went out and bought all the ingredients she needed, and today, while I was mowing the lawn, she started working on it. However, tragedy struck: She didn't understand the anatomy of our blender. So, instead of unlatching the pitcher from the base of the machine, she unscrewed the bottom of the pitcher, unleashing a mess of raw egg and other ingredients all over herself, the counter, and the floor.
