Frozen Nanaimo Pie
I made this melt-in-the-mouth Frozen Nanaimo Pie before going on holiday, and in the sultry West Indies heat, I’d love a slice right now! I have yet to visit Nanaimo, BC, but I find its trademark treat very inspiring when baking (check out my English Nanaimo Bars). This makes a lovely dessert for Labour Day too!
Ingredients (serves 4 to 6):
5 tablespoons unsalted butter
¾ cup Graham Cracker Crumbs
1/3 cup walnut halves
1/3 cup desiccated coconut
¼ cup cocoa powder
¼ cup granulated sugar
1 cup heavy whipping cream
3 cups Homemade Vanilla Bean Ice Cream, softened
2 ounces dark chocolate, roughly chopped
¼ cup heavy whipping cream
Melt butter in a small saucepan over medium heat. Set aside.
In a food processor, combine Graham Cracker Crumbs and walnuts. Process until walnuts are coarsely chopped. Add desiccated coconut, cocoa powder and sugar; process to combine. While on low speed, gradually add melted butter until well-blended. Spoon mixture in a 9″ pie plate and press firmly onto the base and edges. Once pie crust is even, chill in the refrigerator, at least 30 minutes.
In a medium bowl, beat whipping cream on high speed untill stiff peaks just form. Gently fold whipped cream into softened Vanilla Bean Ice Cream, and pour mixture into prepared pie crust. Place in the freezer, for 2 to 3 hours.
In a small bowl over simmeing water, melt dark chocolate with heavy cream. Once smooth and shiny, remove from heat, and let cool, 5 minutes.
Remove frozen pie from the freezer, and carefully pour melted chocolate into a circle in the middle. Return to the freezer, 5 minutes. If you’re making the pie ahead, cover with cling film, and place in the refrigerator, about 15 minutes before serving.
