Bibingka galapong is my favorite type of Bibingka bec. it leans toward the savory side. No doubt, both kinds of Bibingkas (450 php/4 pcs) offered by @lisabibingka are the richest Bibingka we've encountered. They were delivered freshly charcoal-baked emitting smokey banaan leaf aroma & flavor. The galapong was slowly claypot-baked to be pleasantly soft, chewy, dense & filling. The generous amount of salted egg, butter & cheese brings the fullest savory goodness that is complimented by the grated coconut & muscovado sugar. (BTW: a follower who saw my IG story gave me a tip that you can even request for more grated coconut.) We Tsinoys are used to have pork floss w/ everything so 'Bibingka w/ Pork Floss' variant is familiarly good though it is actually unconventional. (Lisa are you Tsinoy? Hehe wonder what inspired this creation but it works!) Moreover, you have to order the Puto Bumbong (140 php/4 pcs) too! It is one of the best versions we've tried.
