Duck Betutu @oxfordoutdoormarket Bebek (Duck) and Ayam (Chicken) cooked in Betutu style is a national favourite of Bali. Traditionally a while bird is marinated in Bumbu Genep and stuffed with cassava (singkong) leaves, wrapped in Palm fronds and slow-roasted in a pit oven, producing wonderfully rich, moist and smoky meat. We debuted Duck last week as the Festive season sees an influx of game birds at reasonable prices into our local @bullring covered markets and it returns again this Wednesday - but only in limited portions so get down early or DM to reserve yours! Kue Lumpang @oxfordoutdoormarket A Party order last Sunday for 150 pieces of Lumpang. Also known in Malaya as Lompang (or Kaswi by Chinese) and as Kucinta in Nusantara Pilipinas. This distinctive jelly-like texture and eggy taste is the result of the Lye water used to set the batter during steaming. Our 'Hitam' version which has become trendy recently is made by the additional of coconut charcoal husk powder which is flavourless and odourless and is used in the traditional Thai Dessert 'Piak Poon' also. Lumpang, along with our now legendary Glutinous Rice Bibingka and Pandan Cake will all be available on the Market this week.
