"Red Dead Redemption 2 is a better horse game than Star Stables, why would anyone play Star Stables over Red Dead Redemption?"
RDR2: You are a gunslinger during the end of the Wild West, yes, you ride a horse, but that is because the horse is the equivalent of your car. The point of the game is to shoot, rob, hunt, etc. The point is NOT to ride horses. Horses are simply an accessory.
SSO: You are a teenager girl who got dumped on a magical island to learn how to ride horses, but oh wow, you are involved with the magic. Now you AND your horse, as equals, must defeat Garnok. The gameplay (aka point of the game) is to run around WITH your horse AS YOUR EQUAL (not like a car) doing races and quests. Your horse is sentient, you can speak to your horse. Your horse is your friend.
Not to mention how RDR2 is a mature game because of the violence and SSO is designed for all ages (with kids as a priority)
