I just spotted a thread in the SoM reddit, which linked to a site where a couple folks have transcribed all the dialogue from the game! You can check the transcripts on their website here!
(There's also transcripts for a few other games, like Myst and Hellblade: Senua's Sacrifice.)
The transcripts include some indications for when Hazel is commenting on objects and notes, as well as the name of the relevant readable, if applicable. For quick out-of-game cross-reference to see the text of what she's commenting on for the readables, you can find those transcribed on the game's wiki here.

I thought I’d share this around because it could be helpful for anyone that wants to include in-game dialogue in their fics :)
I decided to reload a VP save, send Janus to Valhalla (I had kept him in my party because of poison damage being useful) and remind myself of his dialogue there. Transcribing here for reference. (I didn’t get the mission, because IIRC that changes with every game and is the same for each Einherjar. I’ve been tempted to transcribe all of the war missions, but that takes patience I don’t really have at the moment.)
1. Conversation with Loki.
Janus: Father...
[In Valhalla, as Janus is thinking of his deceased father, Loki approaches.]
Loki: What are you doing here, Janus?
Janus: Oh, nothing...
Loki: Yes, I see. Janus, you were once a member of the knighthood, yes?
Janus: Yes...
Loki: You sacrificed yourself to protect them, yes? But how did they thank you?
Janus: I do not wish to talk about it.
Loki: Really? But I wanted to ask you more about it.
Janus: I’m sorry, but no.
Loki: Oh, what a shame.
(He gets +2 hero points for shutting Loki down. Sensible, since Loki was almost certainly trying to make a play similar to the one he made with Lucian. It’s interesting that two things that were counted as flaws for Janus - Tonguetied and Reserved, IIRC - were the things that kept him from becoming a pawn in Loki’s game.)
2. Conversation with Thor
Thor: Janus, your exploits of late astonish me. I shall continue to expect much of you.
Janus: I blush with such praise, lord.
Thor. Hmm. Yes well, farewell.
(Hmm. That seemed slightly awkward.)
3. Contest with Ull (this happened the phase after I transferred him)
Ull: Janus. How about a contest with me and my bow?
Janus: ...if you wish.
Ull: Good, let’s go!
[Bow noises!]
Ull: Hmph. Looks like... a tie.
Janus: It appears so.
Ull: Janus, if you continue to improve, I may not be so lucky next time.

[Noel is playing with a dog in the town square]
Rena: Aww, look at the cute little doggie! Come!
[Not sure if Dias approaches at this point, or if he’s already standing nearby. Either way the dog backs away from him.]
Dog: *Whine Whine* *Whine whine* Arf!
Rena: Mm? What’s wrong, doggie?
Dias: Looks like even the dog doesn’t like me.
Rena: ...Dias.
Noel: No, that’s not it. It’s not because of you, Dias.
Rena: Noel?
Noel: Here, try holding your hand out to him.
Dias: ...
Noel: Go on, nothing to be scared of.
[The dog happily approaches Dias.]
Dog: *Arf* *Arf arf*
[Dias tries to walk away and the dog follows.]
Noel: Ha ha ha! Looks like he’s taken a shine to you, Dias.
Dias: ...
Noel: You really aren’t as detached as you think you are, Dias... or scary, for that matter. Why don’t you try taking the load off your shoulders a little more often?
Rena: He’s right. We’re all here for you.
Dias: I guess so. Being with you guys has made me feel a little better.

Noel: Good-looking guys just seem to look good no matter what they do.
Dias: It’s been following me around ever since I bumped into it. Just like you used to do when you were a child, Rena.
Rena x Noel PA on Centropolis, saved here because I need to include a link to it on something. You can probably tell, but the first two choices cause them to have more affection toward each other, and the third causes them to like each other less.
Rena: What’s wrong, Noel?
Noel: Oh, hello there, Rena. There’s something that’s been bothering me, actually. Have you heard any insects buzzing around since we came to this town, Rena?
Rena: Huh? Come to think of it… not really, no.
Noel: I thought so. This town just isn’t normal. It’s a pure fabrication, a place that only people can live in, and nothing more. And I have to say, I don’t like this place one bit.
1. But towns are made for people, aren’t they?
2. Aren’t you exaggerating a little?
3. Maybe it’s good animals don’t live in towns.
1. Rena: But aren’t cities made for people to live in? Of course they’re going to be “fabrications.”
Noel: Ha ha ha, you have a point there. But we’re part of nature, like everything else, and we’ve created a place to live that forbids any other type of creature from thriving on it. I don’t know, I just think there’s something painfully wrong about all this.
Rena: You think so? I’m not sure what the problem is.
Noel: It’s probably better to think like that. If you never have to think about it, then you don’t have to worry about it.
- We’re a part of nature too. We shouldn’t think of ourselves as anything special.
2. Rena: Don’t you think you’re overreacting a bit, Noel?
Noel: No, I don’t think so. I guess it wouldn’t occur to you right off the bat, having grown up on Expel and all... Just remember one thing: we are nothing more than a single piece in the grand scheme that we call nature. There is nothing even remotely special or unique about our existence.
Rena: Uh... yeah.
- Noel: Boy... I wish I had a chance to visit Expel sometimes.
Rena: If that’s the case, how about we take a trip there together once everything’s back to normal? I could be your tour guide.
Noel: That’d be nice... assuming that actually happens, anyway.
- Rena: Please come visit sometime. I’d be happy to guide you around town.
Noel: Thank you. I might take you up on your offer someday.
3. Rena: I kind of like having nothing but people here. In my village, we have people get attacked and injured by animals every year. Some of them have even died as a result...
Noel: Really? I... I’m sorry to hear that.
- Noel: Maybe nature preservation’s nothing but a foolish illusion created by people who have no sense of reality.
Rena: ?
