Fritters that are tasty and crispy and full of broccoli, cheddar cheese, and garlic. Great as a snack or first course.
Ingredients: 2 cups broccoli florets, steamed and finely chopped. 1/2 cup grated cheddar cheese. 2 cloves garlic, minced. 1/4 cup finely chopped onion. 1/4 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup all-purpose flour. 1 egg. Salt and pepper to taste. 2 tablespoons vegetable oil for frying.
Instructions: Put the chopped broccoli, cheddar cheese, minced garlic, chopped onion, breadcrumbs, Parmesan cheese, and all-purpose flour in a bowl. Whisk the egg in a different bowl, then add it to the broccoli mix. Mix everything together well until it's all mixed together. If you want, you can add salt and pepper to taste. Mix it again. Put the oil in a pan and heat it over medium-low heat. Put spoonfuls of the broccoli mix into the hot oil. Use a spatula to slightly flatten the balls. It will take about 34 minutes per side to get both sides golden brown. Place the fritters on a plate lined with paper towels to drain off the extra oil. Garlicky and Cheesy Broccoli Fritters are a tasty and crispy snack or appetizer that you can serve hot.
