Ingredients: 1 1/2 cups all-purpose flour. 2 tablespoons brown sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1 cup mashed sweet potatoes about 2 medium sweet potatoes. 2 large eggs. 1 1/2 cups milk. 1/4 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1/2 cup chopped candied pecans.
Instructions: In a large mixing bowl, whisk together the flour, brown sugar, baking powder, salt, cinnamon, and nutmeg. In another bowl, combine the mashed sweet potatoes, eggs, milk, melted butter, and vanilla extract. Mix until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps. Preheat your waffle iron according to the manufacturer's instructions and grease it lightly. Pour the waffle batter onto the preheated waffle iron, spreading it evenly. Close the waffle iron and cook according to the manufacturer's instructions, usually about 3-5 minutes, or until the waffles are golden brown and crisp.
