Therefore, lectins became toxic to wound healing in the gut. Pectins are a polysaccharide (long carbohydrate molecule the body cannot break down). Pectin is a water-soluble, fermentable fiber found in the cell walls of many vegetables 🍅 and fruits (primarily in the skin). Besides vegetables, UNRIPE fruits contain high levels of pectins. The most common being apples 🍎 and pears 🍐 . However, as fruits ripens the amount of pectins decrease. High pectins levels will cause GI upset, disrupt digestion and increase toxins in the gut.
