I’ve been busy spring cleaning and getting ready to decorate for Christmas. I also had stacks of fun practicing some things only demonstrated in class or made once only before. This was my twist on Gateau Opera - so, so good. Basically, tiramisu and gateau opera had this baby! Layers of hazelnut dacquoise, salted caramel, espresso buttercream and mocha sponge soaked in a coffee syrup. For a more complex coffee flavour, the buttercream and coffee syrup contain @lyresspiritco Coffee Royale (non-alcoholic so family and pregnant friendly if you overlook the coffee 😉).
