I just got in a delivery of some super fun veggies and fruits, so expect to see some Apocalypse Kitchen Realness on my feed soon enough. For now, have a gander (lol almost a pun!) at my thrifty roasted chicken that was marinated in a beer brine with herbs and garlic. I don’t eat meat but my bf does and I’m doing my best to make it last because meat is scarce out there! The carcass is simmering now with some water and herbs and veggies to make homemade stock. Thrifty cooking is essential when you’re not sure if you’ll have access to food for awhile or if supply will be available when you finally do! This panic we are all experiencing right now is a good moment to consider the plight of others. Many disabled people, displaced folks, illegal immigrants, homeless, students, veterans, single parents and others are living in poverty and times of food insecurity *EVERYDAY*, not just in the time of this pandemic. When you’re out shopping for a month or two worth of food, consider how much you will actually consume versus wasting. Prepare carefully. Leave some food for others! Share supplies and meals with friends and family. Make meal kits for the homeless to distribute (safely!) and share the wealth. We all need to be looking out for one another. Food is fun. Food is art. But for many food can be an insecurity or seem like a luxury. Be mindful of how and what you consume. Don’t hoard supplies. If you have extra and can spare for others, please do!
