Trying out a few recipes from Ginger Pig cookbook/ trying to use up some tomatoes.
Top - Red hot relish - its not very hot but the chillies may get a bit hotter with keeping?
Middle - Passata - this is so easy and a good way to use up/easily store 1.5kg of tomatoes! Simmer the tomatoes with 3 tbsp olive oil and some garlic until its reduced then pass through a sieve and reduce further if you need to, season and its ready to go on top of a pizza! I've made another batch but just divided it in 2 and froze it.
Bottom - is supposed to be tomato chutney but I've replaced half the tomatoes with courgettes for a bit of an experiment. I did this one as it used malt vinegar and that was all I had enough.
