Ingredients: 1 pound clementines. 1 cup granulated sugar. 2 tablespoons fresh ginger, grated. 1/2 cup water.
Instructions: After giving the clementines a thorough cleaning, thinly slice them after removing any seeds. Add the water, granulated sugar, grated ginger, and sliced clementines to a large saucepan. Over medium-high heat, bring the mixture to a boil, stirring occasionally to dissolve the sugar. After the clementines are tender and the mixture has thickened to the consistency of jam, lower the heat to low and simmer for 30 to 40 minutes. To keep from sticking, stir from time to time. Remove the marmalade from the heat and allow it to cool slightly once it reaches the consistency you desire. While the marmalade is still warm, pour it into sterile, clean jars. Tightly seal the jars. Before putting the marmalade in the refrigerator, let it cool fully at room temperature.
