Absolutely obsessed with Wear Me Down!!! I was wondering though, how does Ari find her that first time? Is there some soulmate magic going on, or does he have great PIs?

If you mean Ari spotting her at the restaurant the first time, true and pure coincidence. Ari didn't pick that restaurant for his meeting anticipating to meet his soulmate, but likely felt a pull the closer he got to the place (similar to the way our reader felt off).
If you mean Ari finding her at the store, if you want to believe it was NOT soulmate magic, the man has resources and isn't afraid to use them. The moment you rushed out of the restaurant, the wheels would've been turning in his head to find you. Remember, he got to Luke and you had NO idea.
If you want to believe it WAS soulmate magic, it would've been slightly difficult if the person isn't as determined as Ari. He hadn't physically touched you yet, so the connection between your minds wasn't there. But he wants what he wants, would've kept an eye out for your aura, and honed in on his instincts to find you.
Once spotted, soulmate magic or resources, he was calculated in the moment he chose to see you. An errand where you were without Luke, in a place where you likely wouldn't cause a scene, a harmless touch to secure the bond. And, well, we know what happened once he got in your head.
I was thinking more about The Sacred Hunt, and sorry in advance if your world building did not go this far but I was wondering if Curtis had any say in who would be in his bride pool? Was that totally the elder's decision or did he nudge them in any particular way? I'm just wondering how the potential brides are picked, since there's rules for Curtis's title.

Hunter Curtis didn't interfere with the choosing of brides, since he didn't assume he'd get the title. It's at the ceremony that night that The Hunter is named, so everyone awaits that news, along with the hunters aspiring for the title. The women are chosen by the Elders as well, as the most valuable/worthy of the union. First of all being of age. Then their traits and skills are taken into consideration, assessing if they'd be a good match with the hunter, as well if they'd provide for the community in return for being granted such honor.
Then The Hunter gets to pick from the offered brides. So while Curtis had no say in which women were picked as offering, he was the one making the decision about who will he pick out of the 10 potential brides.
He didn't have some big crush on the Reader before, but he noticed her before (because he's very observant and because she drew his attention too). So when he saw her lined with other women, he knew instantly it would be her. If she refused to be a bride, or if she wasn't chosen by the Elders for the role, Curtis would pick someone else, but also after his own thorough assessment. Curtis is traditional, he respects laws of the nature and the laws of your people, so he'd follow with what's expected of him and pick a wife whom he'd adore and respect and grew to love.
I really love your nesting series! I was wondering though, if the reader hadn't ended up pregnant, would Steve have fast paced their relationship as quickly as he did? I read in another comment from you he basically considered her his right away, but would there have been more of the tradtional dating/wooing or was she always going to be his kidnapped little bird?
He'd combine the possessive side with wooing. Steve kept tabs on her, because he wanted to make another move on her and also because he already considered his, in a sense. Steve is a traditional man (as he claims), hence marriage before the baby is out, but without the unplanned pregnancy he'd be traditional in his type of dating approach. He'd come to pick her up after work, take her to a nice place, or wherever she'd want to, then take her apart 😏 Gifts, not all expensive or rare, sometimes just sending her some pastries.
And he has a winning ace up his sleeve - because what's hotter than spending a day/evening under the blankets, watching movies on a gigantic screen which Steve has at his place, eating fresh popcorn from the machine he has in his kitchen, and doing it seated next to Steve who wears nothing but low hung sweats and a white beater that clings to his tattooed chest...
So Steve would work for it, but at the same time he doesn't allow there to be any other outcome than having her by his side
