The green coconut is one that is young, or unripe, and is mainly used for coconut water and its fatty jelly like flesh. When fully ripe most coconuts turn brown and hairy looking and contain a potent fatty milk like nectar used for cooking and harder insides that are dried for use as coconut flakes. In the 50 United States coconuts are grown in Hawaii and South Florida. The fatty acids and breakdown products in coconut oil can kill harmful pathogens, helping to prevent infections. Another application is using it like mouthwash in a process called oil pulling, which can kill some of the harmful bacteria in the mouth, and improve dental health.
